I'm using NixOS 23.05 with GNOME, and my current session is running Wayland. I have the following keyboard configuration:

  # Configure keymap in X11
  services.xserver = {
    layout = "us";
    xkbVariant = "";
  };

Is this configuration exclusive to X11, or does it also apply to Wayland?

The option only works as an initial value on X (not sure about Wayland). Once you first log in, gnome-settings-daemon takes over so changing the option will no longer do anything. You can set it with dconf https://github.com/jtojnar/nixfiles/blob/9661c7d817753a1957b41b81bb29f6ec4e45d9c6/hosts/theo/configuration.nix#L581-L595

Yep, that’s a flatpak runtime. You can go ahead and click update.

GNOME Archive Manager is outdated and should no longer be used. Try using Files or fusemount instead.

I've been having this problem with newly installed flatpaks as well, where the icons don't show and all i get is this generic cogwheel icon - which is fixed upon relogging.

GNOME Archive Manager is outdated and should no longer be used. Try using Files (right-click + Extract on the file manager) or fusemount instead. 
There are still some workflows that require Archive Manager and it is still maintained (it has recently been ported to GTK 4)
